Mushroom & Thyme Soup

This dairy-free vegan mushroom & thyme soup is nourishing, healthy and flavorful.

INGREDIENTS

Radish

Brown rice Olive oil Onion Garlic Button mushrooms Zucchini / courgette Fresh thyme  Vegetable stock Pepper Salt

To get started, cook the brown rice.

Next, add the oil, onion, and garlic and cook until soft and fragrant.

Add in the mushrooms, and place the lid on, cooking for a few minutes.

3.

Add in the rest of the ingredients & bring to a boil then reduce to a simmer.

4.

Add in the cooked rice and simmer for 20 minutes. Season to taste and serve!

You can serve this as a main or starter. Perfect for cold days and when you're unwell. It's easy to make and very healthy.

You can also saute a few mushrooms to add on top with some chopped chives and an extra drizzle of olive oil.
