Apple Pie Overnight Oats (Vegan)

Description

These overnight oats are healthy, filling, flavourful, and easy to make breakfast option that taste just like apple pie.


Ingredients

Oats:

  • 1½ cups / 150g rolled oats
  • ½ teaspoon mixed spice (apple pie mix or pumpkin pie mix will also work)
  • ½ teaspoon ground cinnamon
  • 1 tablespoon ground flaxseeds
  • Pinch of salt
  • 2 tablespoons almond butter
  • 1½ cups / 365ml plant milk (I used plain soy)
  • 3 tablespoons maple syrup
  • ½ teaspoon vanilla extract
  • Zest of one orange

Stewed apples:

  • 1 tablespoon vegan butter
  • 3 apples, cored and chopped into bite-sized pieces (Pink Lady and Granny Smith are best)
  • ⅓ cup / 30g / 1.06 ounces walnuts, chopped (or pecans)
  • 3 tablespoons maple syrup
  • ⅓ cup fresh orange juice (about one orange)
  • ½ teaspoon ground cinnamon
  • ½ teaspoon vanilla extract

Instructions

  1. Place all the oats ingredients into a container or large jar (with a lid) and mix well. Set in the fridge for at least 6 hours, ideally overnight.
  2. To make the stewed apples, in a small saucepan, add the butter and apples, sauteing for a couple of minutes on medium-high heat. 
  3. Add in the remainder of the stewed apple ingredients and cook for 10-15 minutes, cooking until the apples have become softer but still have a bit of a bite and aren’t falling apart. You can prepare the apples in the morning if you want to add some warmth to your oats or prepare the night before to have them ready the next morning. 
  4. Place a tablespoon of stewed apples in the bottom of your bowl, jar, or glass. Spread the oats evenly between four servings and top with the rest of the apples. For extra sweetness, drizzle with maple syrup but I find it pretty sweet without it.
