This red lentil stew with potatoes and peas is nourishing, filling and hearty. Perfect for leftovers as it improves with age.

Ingredients you'll need:

- Split red lentils - Oil - Onion - Garlic - Ginger - Curry and turmeric powder - Cumin seeds - Potatoes - Coconut milk - Peas - Baby spinach - Salt

Measure and soak the lentils in water before you put the pot on the stove. 


Next, add the oil, onion, garlic, and spices to cook until soft and fragrant. Add in the potatoes & continue to cook.


Add in the lentils, water & coconut milk and simmer for 20 minutes.


Add the peas and baby spinach, and season.


Perfect meal packed with healthy ingredients and pantry staples.


You can serve this as a main or side with some rice. It will also get better with age. It will keep for up to 4 days.
