Ingredients

Vegan Puff Pastry Danish with Jam

  • 2 sheets puff pastry (26x26cm / 10.2×10.2 inches or similar, each)
  • 1 cup thick custard
  • 1 cup / 330g jam (whichever you like)
  • 23 tablespoons apricot glaze (optional)

Instructions

  1. Line two baking sheets with parchment paper, place your puff pastry sheets to thaw out as per packet instructions, then set aside.
  2. Preheat the oven to 180 degrees Celcius (355 degrees Fahrenheit) fan forced. 
  3. Once the pastry has thawed enough to handle, cut each sheet of pastry into four equal parts, then score another smaller square (or rectangle) inside (about 2cm / .8inch from the edge).
  4. Add two tablespoons of custard into the squares and spread evenly.
  5. Add two tablespoons of jam on top of the custard and spread it out. Be careful to ensure the jam and custard don’t start to mix with each other.
  6. Place them into the oven for 15-20 minutes or until the pastry is a nice golden.
  7. To create a shiny, extra-sweet pastry, brush the pastry with a layer of apricot jam and put them back in the oven for a couple of minutes.
  8. Take the pastries out of the oven and let cool.
