Ingredients
Vegan Puff Pastry Danish with Jam
- 2 sheets puff pastry (26x26cm / 10.2×10.2 inches or similar, each)
- 1 cup thick custard
- 1 cup / 330g jam (whichever you like)
- 2–3 tablespoons apricot glaze (optional)
Instructions
- Line two baking sheets with parchment paper, place your puff pastry sheets to thaw out as per packet instructions, then set aside.
- Preheat the oven to 180 degrees Celcius (355 degrees Fahrenheit) fan forced.
- Once the pastry has thawed enough to handle, cut each sheet of pastry into four equal parts, then score another smaller square (or rectangle) inside (about 2cm / .8inch from the edge).
- Add two tablespoons of custard into the squares and spread evenly.
- Add two tablespoons of jam on top of the custard and spread it out. Be careful to ensure the jam and custard don’t start to mix with each other.
- Place them into the oven for 15-20 minutes or until the pastry is a nice golden.
- To create a shiny, extra-sweet pastry, brush the pastry with a layer of apricot jam and put them back in the oven for a couple of minutes.
- Take the pastries out of the oven and let cool.
