Ingredients

Herby Lemon Marinated Chickpeas

Ingredients:

  • 3 tablespoons extra-virgin olive oil
  • 2 teaspoons lemon zest (1 medium lemon)
  • 2 tablespoons lemon juice (around half a medium lemon)
  • 2 tablespoons fresh parsley, chopped
  • ¼ small red onion (or half a shallot), thinly sliced into half-moons
  • ½ teaspoon sumac (optional)
  • 1 teaspoon maple syrup
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 1 can (400g/15 oz) chickpeas, drained and rinsed (or 1.5 cups of cooked chickpeas)

Moroccan Spiced Marinated Chickpeas

Ingredients:

  • 2 tablespoons extra-virgin olive oil
  • 2 teaspoons lemon juice
  • 1 teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ½ teaspoon smoked paprika
  • ¼ teaspoon ground cinnamon
  • 3 tablespoons currants
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 can (400g/15 oz) chickpeas, drained and rinsed (or 1.5 cups of cooked chickpeas)
  • 3 tablespoons fresh mint leaves, chopped 

Instructions

Herby Lemon Marinated Chickpeas

  1. In a bowl, whisk together all the ingredients besides the chickpeas.
  2. Add the drained chickpeas to the bowl and toss to coat them evenly with the marinade.
  3. Let the chickpeas marinate for at least 10 minutes.
  4. Serve as a snack, in a bowl, or as a topping for salads, hummus (as pictured) and wraps.

Moroccan Spiced Marinated Chickpeas

  1. In a bowl, whisk together olive oil, lemon juice, ground cumin, ground coriander, smoked paprika, ground cinnamon, currants, salt, and black pepper.
  2. Add the drained chickpeas to the bowl and toss to coat them evenly with the spice mixture.
  3. Let the chickpeas marinate for at least 10 minutes.
  4. Stir in chopped fresh mint leaves.
  5. Serve as a side dish or in bowls with couscous or quinoa.
