Arugula (Rocket), Pear & Walnut Salad
This Arugula, Pear & Walnut Salad brings together peppery rocket, sweet pears, and crunchy toasted walnuts, all dressed with a simple vinaigrette. It’s fresh, bright, and exactly what you need alongside rich, creamy dishes. It takes just 15-minutes to throw together, but it’s the kind of salad that makes the whole meal feel complete—light and refreshing when you want something to balance out heavier mains.
I created this salad as the ideal accompaniment to my pot pie. I needed something that would cut through the richness and bring brightness to the plate. The peppery arugula provides bite, while the sweet firm pears and earthy walnuts create a beautiful contrast. It’s become my go-to whenever I’m serving something indulgent and want a side that feels effortless but adds real balance to the meal.
Why This Combination Works: The Science
There’s a reason this salad tastes so good – it’s all about flavor balance! Arugula contains natural compounds called glucosinolates, which give it that distinctive peppery bite. These compounds create a perfect contrast with the natural sugars in ripe pears. The bitter-peppery notes cut through the sweetness, while the walnuts add earthy richness and a satisfying crunch. It’s a textbook example of how contrasting flavors work together.
Ingredients
Choosing the Right Pears
Not all pears are created equal when it comes to salads! You want pears that will hold their shape and provide a pleasant crunch rather than turning mushy.
Best varieties for this salad:
- Bosc pears – Firm, crisp texture with a slightly spicy, honeyed flavor.
- Anjou pears (red or green) – Mild and firm, perfect for tossing with greens.
- Bartlett pears – Sweet and juicy (though slightly softer).
- Comice pears – Quite sweet with good texture.
TIP: Choose pears that are ripe but still firm. Give them a gentle squeeze near the stem – if there’s a slight give, they’re perfect. Avoid pears that are soft all over, as they’ll be too mushy for salad.
Step by Step
Variations
- Swap the greens: Use half arugula and half baby spinach for a milder flavor, or add some watercress for extra peppery punch.
- Different nuts: Try toasted pecans, almonds, or hazelnuts instead of walnuts.
- Fruit additions: Toss in some pomegranate seeds or dried cranberries for pops of tartness.
- Make it heartier: Add grilled tofu, crispy tempeh, or chickpeas for extra protein.
Storage
This salad is best enjoyed immediately after assembling. However, you can make and store some components separately:
- Dressing: Store in an airtight container in the refrigerator for up to 3 days. Bring to room temperature and shake well before using.
- Toasted walnuts: Store at room temperature in an airtight container for up to 3 days.
Once the salad is dressed, consume it within an hour, as the greens will wilt.
What you’ll need to prep just before serving:
- Arugula: Keep unwashed in the fridge, then wash and dry just before assembling.
- Pears: Slice right before serving for the best texture and appearance.

Description
This Arugula, Pear & Walnut Salad brings together peppery greens, sweet pears, and crunchy toasted walnuts, all dressed with a simple vinaigrette. It’s fresh, bright, and exactly what you need alongside rich, creamy dishes.
Ingredients
Vinaigrette:
- 2 tablespoons apple cider vinegar (or white wine vinegar)
- 1 teaspoon Dijon mustard (a mild mustard would also work)
- 1 teaspoon maple syrup
- ½ teaspoon salt
- Ground black pepper, to taste (leave out if your arugula is very peppery)
- ⅓ cup / 55ml extra virgin olive oil
Salad:
- 4.23 ounces / 120g arugula (aka rocket)
- 1–2 ripe pears (I used the Bosc variety)
- 1 cup / 90g walnuts
- Shaved vegan parmesan (optional)
Instructions
- Make the vinaigrette: In a small bowl, whisk together all the ingredients besides the olive oil.
- Slowly drizzle in the olive oil (⅓ cup) while whisking continuously until emulsified. You want the oil to incorporate with the rest of the ingredients.
- Taste and adjust – add more vinegar or mustard if you want it sharper, more maple syrup if it’s too tart, or more oil if it’s too acidic for you.
- Toast the walnuts: Toast the walnuts (1 cup) in a dry pan until fragrant, and when they start to get some color. Do it on low-medium heat so that they don’t burn. Toss them occasionally in the pan to rotate them. Transfer them to a chopping board and chop them roughly.
- Slice the pear: Thinly slice the pears just before you’re ready to serve. Use as many pears as you like in this salad. I used about one and a half pears (ate the rest as a snack). This can also vary depending on the size of your pear and the variety you choose. The sweeter the pear, the less I would use.
- Assemble: Place the washed and dried arugula (rocket) in a large bowl.
- Add the pears, chopped walnuts, and parmesan.
- Drizzle with vinaigrette and toss it all gently.
- Serve immediately. Once the salad is dressed, consume it within an hour, as the greens will wilt.
