Ginger Grapefruit Spritzer
This non-alcoholic ginger grapefruit spritzer is refreshing, easy, and quick to make, uses fresh ingredients, and is the perfect beverage to enjoy when you want a drink with a bit of fizz without the sugar high.
This mocktail spritzer has three components to it; ginger syrup, fresh grapefruit juice, and sparkling mineral water. You can garnish it with mint sprigs for added freshness and colour!
Serve it at your next lunch or dinner party and impress everyone with a layered drink that’s pretty to look at but really easy to make. The best thing is that you can make all the components ahead of time and layer them in the glass just before serving.
What you’ll need for this ginger grapefruit spritzer recipe
Rice malt syrup – it’s also known as brown rice syrup, and it’s a sticky, thick syrup that is readily available in most supermarkets. Alternatively, find it in a health food store. If you’d prefer to use agave syrup keep in mind that it’s sweeter, so adjust accordingly.

Fresh ginger – nothing beats freshly squeezed ginger juice. You can juice the ginger, but it’s less cleaning up if you just grate it and squeeze it through a muslin cloth or your hands. You cannot substitute it with ground ginger.
Red grapefruit juice – I would highly recommend juicing your own red grapefruits. Store-bought grapefruit juice is often filled with additives and sugar. If you can get the pure red grapefruit juice, then that can be a substitute. Otherwise, please juice your own. The redder the flesh, the sweeter the flavour. So if you use a pink grapefruit, the drink will be more bitter.
Sparkling mineral water – this will give you a beautiful fizzy drink without the alcohol. Mineral water also has just that, minerals. So it’s a healthier alternative to just carbonated water.
Mint sprigs – mint will add a touch of colour and freshness. You can also use it to stir your drink to distribute the layers evenly before drinking. Mint is totally an optional addition to this spritzer.
Tips for making this pink grapefruit spritzer
- The best part of this recipe is that you don’t need to cook a simple syrup – all you have to do is mix the ginger juice, rice malt syrup, and water.
- The ginger syrup and freshly squeezed red grapefruit juice can be made up to two days ahead of time.
- If you want to spike it you can with white rum or sparkling wine in place of the mineral water.
- If you don’t want to use ice cubes, ensure that your sparkling mineral water is chilled before assembling.
Ginger and red grapefruit go really well together, and this version of a vegan spritzer creates a healthier alternative to other festive drinks out there.
You’ll get the bitter notes from the grapefruit for balance with the sweetness of the rice malt syrup and kick from the ginger. I think that this drink will certainly impress!

Description
This ginger grapefruit non-alcoholic spritzer is perfect for when you need a drink in 10 minutes that looks fancy but is very easy to make! Enjoy with some fresh mint for colour and freshness.
Ingredients
- 3-inch piece ginger, finely grated (about ⅓ cup once grated)
- ⅓ cup / 115g rice malt syrup (aka brown rice syrup)
- ⅓ cup / 80ml water
- 1 cup / 240ml red grapefruit juice* (2–3 grapefruits)
- Sparkling mineral water
To serve: (optional)
- Ice cubes
- Mint sprigs
Instructions
- Once you have minced the ginger with a fine grater, squeeze all the juice out through your hands or a muslin cloth into a jar or glass. Alternatively, use a juicer to do this.
- Add the rice malt syrup and water and stir well. Once the ginger syrup is completely incorporated, set it aside.
- Juice your grapefruits, making sure to remove any seeds as you go.
- To serve: To a tall glass, add in ice cubes (optional), followed by a ¼ of the ginger syrup, then ¼ of the grapefruit juice, and finally topping it off with sparkling mineral water. Add a sprig or two of mint if desired. Give it a good stir before consuming.

Yield: It will vary depending on how much ice you use and the size of your glasses.

Want to make this an adult drink? You can add some white rum or other alcohol of choice. The sparkling mineral water can be swapped for sparkling wine like prosecco, champagne, or Moscato.
