  1. Thank you for the kindness and sharing. I made above using 12 cup muffin size pan. I used 2 very ripe & 1.5 medium ripe bananas. I exchanged 1/2 cup flour with 1/2 cup whole wheat flour. I omitted vanilla extract. I used 1/4 cup brown sugar. They are a hit, from kids to adults who have a sweet tooth but have never had plant based desserts. Kids have at least 2 of them and look forward to bringing some home. 🙂

  2. These look delicious and are suitable for school lunches as they can be nut free (I generally use oat milk). Thank you I’d love to see more muffin recipes. Best of luck in your new home.
