  2. I am making the lentil from scratch but have never soaked them overnight. Why do you think its best. There is also much controversy over soaking, say, black beans overnight. I’m really confused…thank you for your wonderful recipes!!!!!!!

    1. Hi Marna, I haven’t heard the controversies around soaking beans and lentils? It really helps to speed up the cooking process, and not only that, but it helps you to digest them better. I would do 1 cup of dried lentils for this recipe. There are further instructions earlier in the post for this 🙂
